When Collin was in the third grade, his class prepared a cookbook as a Mother's Day gift for each child's mother. His teacher instructed them to provide a recipe of a favorite dish that their mothers prepare for them. As I oohed and awed over that cookbook that Sunday morning, I was thinking to myself, what recipe of mine did Collin put in the cookbook? I will go and admit it, I am a terrible cook. I really enjoy cooking and I am absolutely addicted to food and The Food Network, I just really stink at the cooking part. Although I can follow a recipe, I have barely mastered the art of toasting bread and boiling water. (I do not have warm, fuzzy memories from my days of the Easy-Bake Oven and still have nightmares from 8th grade Home Economics class.) So as I flipped through the pages of recipes for dishes such as Meatball Soup, Pork Souvlakia, Shrimp Alfredo, and Roast Turkey Breast With Zesty Dry Rub, here is my "recipe" that Collin submitted in the cookbook:
Peanut Butter and Jelly
Grape Jelly
Peanut Butter
1 Bowl
2 Spoons
Mix Peanut Butter and Jelly
I must agree with Collin, I can mix up a pretty good Peanut Butter and Jelly, and have since learned to scramble eggs, make grilled cheese sandwiches, Shake-and-Bake Chicken, tacos, spaghetti, and even lasagna! The hubby is definitely the chef in our family and I am not jealous one bit! I think I will always prefer something that I can prepare in the microwave because it's quicker and requires less clean-up. (and I know probably less healthy) Anyway, I hope that doesn't make me a bad mother.
Anyway, I must give a "shout out" to my mother. I was going to write a long post about her, but found this quote that sums up the way I feel about her much better than any words that I can ever write. I love you, Mama!
